Happy New Year!!!!

No, I'm not 26 days behind!!! Today marks the first day of the Chinese New Year!! So in order to celebrate the year of the ox, I made egg rolls for the OX that I married!! (no joke, he was born in the year of the ox, so he's really an ox. haha Then again, I'm a rat...)

I have honestly never made egg rolls before- I made lumpia with a philipino family before, but today I basically had no clue what I was doing (except for maybe the wrapping.) It was pretty fun! I found an amazing recipe online, and after a quick stop at Macey's, I had everything I needed. I browned the meat- seasoning it well. Then I sautéed the cabbage, and finally I folded the mixture into an egg roll "envelope" and deep fried it! Perhaps it wasn't the healthiest meal, but it sure was yummy!! I really LOVED the recipe I found on allrecipe.com. It was delicious!

Happy Chinese New Year!

good job being adventurous...that is more than I could get Dad to do. And, it looks like it might have tasted yummy! We'll have to work that into the diet. :) Hugs, Mom
